I have more squash than I know what to do with. Anyone have some good recipes?

Slice, dip in flour, fry in skillet, saltnpeppa, eat.
Repeat until vegetable drawer is empty.
That's the only yellow squash recipe you need. :p

My mother-in-law (from your neck of the woods) has a great recipe sorta like the one Bleedorange posted.
If you want to go all out there is a Lebanese dished called Kusa. Basically you core out the middle and stuff it with a mixture of ground beef, rice and spices. You place them in a large pot and cook them in a tomato sauce. Delicious and very healthy, ask any Simon women! I can get the recipe if that is something you would like to try.

If medium size squash use 3-4
1 can 30oz pureed tomatoes
1 lb ground beef (lean)
1 cup long grain rice
1/2 tsp garlic salt
1/2 tsp of regular salt and 1/2 of pepper
1-1/2tsp of chopped garlic
Cut squash in half and core out the seeds. Take ground beef, rice salts and pepper and mix together. Take 1/4 cup of pureed tomatoes and mix in with ground beef mixture. In a deep skilet pour remaining tomato puree into the bottom then add chopped garlic and mix together. Take each half of squash and fill with ground beef mixture and place in skillet. Add as much water as needed to come up to the side of the squash. Cover and bring to a boil, then lower to a simmer. Simmer for 45-60 minutes. When I dish this out I usually add a little butter and salt and pepper.

I don't mean to be a jerk, bleed but there are a few things wrong about your recipe.
1. you need cinnamon, it's a must in any Lebanese dish that uses beef or lamb.
2. You don't cut the squash in half, you core it and fill it.
3. you don't add the tomato to the stuffing, you cook the stuffed squash in the tomato sauce.
4. It needs to cook for at least 3 hours.

I suppose you make pizza with biscuit mix, spaghetti-o's and velveeta too!

Fried Squash is far & away the best recipe. Hands down.......
But, it is also good sliced into spears, and grilled.
Get an Eggplant Parmesean recipe and use squash instead.
Also, squash bread is good.
Sorry, no actual recipes, just ideas. But you can google em!

I like fried squash, but it's just soooo greasy. I could try some fried green tomatoes. I have plenty.

BAKED SQUASH CASSEROLE
2 c. cooked & drained squash
1 can cream of chicken soup
1 tsp. grated onion
1 c. sour cream (may sub. 1/4 c. mayonnaise)
1 grated carrot
Dry herb crumbs
Mix and place on top of a thin layer of crumbs in casserole. Top with rest (another thin layer of crumbs). Dot with butter. Bake for 30 minutes at 350 degrees.

Green Tomatoes Parmesan
3 medium green tomatoes, sliced 1/4 inch thick
Salt
1/4 C. cornmeal
1/4 C. grated Parmesan cheese (jar, not fresh)
2 T. all-purpose flour
3/4 t. garlic salt
1/2 t. dried oregano
1/8 t. pepper
1 egg beaten
1/4 (ish) C. cooking oil
Lightly sprinkle tomatoes with salt; drain on paper towels for 30-60 minutes. Meanwhile, combine dry ingredients in a shallow plate. Dip each tomato slice into egg, then into cornmeal mixture. In a medium skillet, heat oil over medium-high heat. Fry on each side until golden brown. "De-grease" on paper towels. Serve!

Marinated Squash
4 C. sliced yellow squash
1 C. thinly sliced onion
1 C. chopped green pepper
1 small jar chopped pimento
Let stand one hour in 1/3 C. salt & enough water to cover; drain well.
Bring to boil:
1 C. sugar
1 C. vinegar
1 scant T. celery seed
1 " T. mustard seed
Add squash mixture and bring to rolling boil again. Remove from heat, cool slightly, put in jars and refrigerate. Will keep indefinitely.

Squash Italian Style
4 T. olive oil
1 C. onion, thinly sliced
1 clove minced garlic
2 yellow (or zuch.) squash, thinly sliced
1 green pepper, cut into thin strips
1 C. diced tomatoes
1 1/2 t. salt
1/2 t. pepper
1/2 t. oregano
Parmesan cheese
Saute onion & garlic about 5 minutes. Add squash & green pepper, saute about 10 minutes; stirring frequently. Stir in tomatoes, salt, pepper, and oregano.
Cover & cook about 20 minutes over low heat, stirring occasionally.
Sprinkle w/Parmesan before serving.

Squash Patties
4 C. sliced squash
1 small onion, chopped
1 T. chopped green pepper
1 C. all purpose flour
1/2 C. milk
1 egg slightly beaten
3 T. oil
1 T sugar
Oil for frying.
Combine squash, onion, and green pepper in a medium saucepan; add water to cover. Cook over medium heat until tender. Drain. Add next 5 ingredients, mixing well. Drop by rounded T's into deep, hot oil. Fry until browned. Yield: 10-12 patties.

1 pound sausage browned
4 or 5 squash cut up in small pieces
l large onion
2 cups water
cook squash and onion until done.
pour off extra water and mix together
with 2 can of cream of celery soup and l
box of stove top dressing. I leave a little water from the
squash in the mix also.
put into a 9 x 12 backing dish and cook at 350 until bubbly.
Take out of the oven and sprinkle with cheese.

Anyone have any suggestions for freezing squash? Do you freeze it whole or cut up?
