Jamaican Jerk Chicken
1 Chicken Quartered
Chop Course:
2 Ea Scotch Bonnet or Jalapeno Pepper
8 Cloves Garlic
3 EA Med Onions
2 Tbsp Thyme
2 Tbsp Allspice
2 Tbsp Sugar
1 Tsp Salt
2 Tsp Black Pepper
2 Tsp Cinnamon
2 Tsp Nutmeg
2 Tsp Ginger
1/2 Cup Olive Oil
1/2 Cup Soy Sauce
1 Ea Juice form Lime
1 Cup White Wine Vinegar
1/2 Cup Molasses
1 Blend all ingredients, but not to liquid the onion/peppers/garlic
2 Place 3/4 sauce in zip-lock bag and save remainder for dipping
3 Rub sauce into meat and place in zip-lock bag overnight.
4 Baste with sauce and grill
or
4 Cook in oven & 350* for 30 min, turn and cook another 30 minutes
5 Baste with sauce and grill until hot.
