Here's a taco soup recipe with some added vegetables in it. Satisfying and not TOO bad for you!
Taco Soup
1 lb ground beef
1 large carrot, diced
1 small onion, diced
1-2 stalks celery, diced
Brown together above ingredients and drain off grease.
Add:
2 10-z cans beef broth
2 8 -oz cans tomato sauce
1/2 cup commercial salsa
1 16-oz can ranch-style beans
8 oz frozen corn kernals
1 tsp chili powder
2 tsp cumen
1/2 tsp garlic powder
3/4 cup water
Simmer together about 10-15 minutes.
Top with crushed tortilla chips, shredded cheese, green onions, diced tomatoes, sour cream or your favorite tex-mex toppings.
