View Full Version : Shoepeg Corn Casserole......YUM!!!

This is obviously not a Fat Free dish, but what good foods are? Very few.

This is one of my favorites, and it's very easy. If you love corn casserole dishes, this one's for you. I can't tell you how good the flavor is.

2 cans White Shoepeg Corn (Green Giant)
1 12 oz. package Philly Cream Cheese (softened)
1 stick salted butter (softened)
1 can peeled and chopped green chili's (small can)
2 tablespoons minced garlic

Mix all ingredients together and put in 9" X 9" casserole dish.
Bake uncovered at 350 for approx. 20 minutes or until bubbling.

Feeds approx. 5-6 people. Double the ingredients if you're cooking for a big family get-together. Tastes terrific with a big ol' baked ham. You'll have 3 or 4 people ask you for the recipe.

It sounds great, and I'm definitely going to make it. One question--cream cheese comes only in 8 oz. or 3 oz. blocks. Do you mean to use the 8 oz. package?

Hell, I bet his answer is:

2 8 oz. packages - Use one whole package; open the second package, and cut two portions: one 3 oz. and a 1 oz.!:cool-smiley-027:

I meant 1 package. (8 oz. I guess it is)

The only thing I know about 12 oz. is beer.
