Erick's Chili
2 pounds Ground Beef
1 Large Onion
3 cloves Garlic
1 pound Bacon (trimmed & diced)
1 can (28 oz) Crushed Tomato
1 can (28 oz) petite Diced Tomato
1 finely diced pepper (jalapeno)
1/2 bottle of Brown Ale (more/less depending on how think you like)
1/2 can on light red Kidney Beans (optional!)
Spices (to taste):
Brown Sugar
Cayenne Pepper
Paprika
Salt
Chili Powder
Put all ingredients into a crock pot except for meats, onion and garlic.
Cook bacon until med. then throw in crock. Brown beef in grease, drain and throw in crock. Wipe skillet clean and saute diced onion and garlic in a little olive oil. Throw in crock and stir. Cook for a few hours to melt flavors.
