OK, this is one of my favorites. Very good on a Monday Night Football showdown.

Cook your steak(sirloin, filet, strip, ribeye) to your liking

1 whole garlic in cloves
1/2 tbls of fresh thyme(thyme is a strong herb, add lightly)
fresh grated parmesan cheese
Dijon Mustard

In sauce pan brown your garlic cloves in some olive oil. Cook them on medium heat until they are golden brown and soft, you may have to remove some over cooked skin. Combine in bowl and add about a 1/4 a cup of the mustard, might add more if you think, mash with fork garlic cloves in the mustard, your going for a pretty thick paste of mustard and garlic. Add your fresh thyme, mix well. Coat the top of your steaks with the mixture. Add a layer of the fresh parmesan cheese on each steak, make it pretty dense. Put steaks on cooking sheet in oven on 450 for about 10-12 minutes or until parmesan is melted. Serve with salad and baked potatoe.

Depending on how many steaks you cook recipe may vary with the topping.

Enjoy

Have you tried "baking" the garlic?

Exactly....I love to cut the tops off of whole heads of garlic and pour a little olive oil and salt an pepper over them. Bake in the over at 425 for 40 minutes or so.

Squish that into 3-4 pounds of yukon gold potatoes!!!!!! Or spread on bread, over steaks, etc....

Gonna try that steak recipe jon. Sounds pretty fantastic.

Glad you figured it out, as I didn't make it very clear. Baked garlic is the "fast" way to the paste you work so hard to make; it's also great in mashed potatoes!
