View Full Version : Andoulle Twice baked potatoes

This is easy and goes great with a steak and salad dinner. Works best when you have to feed a family of four or five.

Baked potatoe
Sour Cream
Green onion
Fresh parmesan cheese-grated
Bacon-fresh off the skillet tastes better, but bacon bits will work if your in a hurry-Preferrably the ones that are not dehydrated.
Andoulle sausage-must brown in skillet on medium heat

Put baked potatoes in microwave until almost soft, finish it off in the oven at 450 to give it that oven baked effect.

When the potatoes are done, cut off the very tips of the potatoes. Take a table spoon and spoon out all of the meat of the potatoe into a bowl. Mix about a 1/2 cup of sour cream or to your taste into the bowl. Chop your green onion all the way down to the chive part and put all of that in the bowl as well. Put in your bacon and sausage and mix well. Use the spoon to put the mixture back into the potatoes shell. Once all the potatoes have been filled get a cooking sheet and put them on there with the potatoe tip kinda stuck back on. Drizzle a bit of extra virgin olive oil over the potatoes and then sprinkle grated cheese over potatoes. bake for about 7-10 minutes on 450.

Your done. Yummers!!!
