View Full Version : "Hatch" Green Chile Sauce

It's Hatch Pepper season. Bought/roasted the peppers, made the sauce and had chicken enchiladas tonight; totally awesome! It's a real pain to bake/ peel/process the chilies, but it's well worth it. Following recipe is from Central Market; I used 15 peppers which made about 1.25 C of sauce:

I bought about 8 lbs of roasted Hatch chiles today at the Crest in Edmond. They had a guy roasting them just outside the store. Oh yeah.

"Get used to disappointment." ;)
I laid them all out on cookie sheets and froze them. Now I have two gallon bags of frozen chile-sicles. This year's batch is much hotter than last year's.
What's your favorite enchilada recipe? I only got a few of the chiles last year. I made some sauce similar to the recipe you posted and made a pork verde. Good stuff. However, as much as I like eating Mexican food, I haven't cooked much of it. So if you have other recipes that use these chiles, please post!

We fixed a non-Hatch enchilada recipe a couple of days ago; I'll try to get the recipe posted today/tomorrow as it's easy and delicious.
