Highly recommend if you like spicy; from "License to Grill":
4 medium sweet potatoes, peeled/diced large
2 T. mashed canned chipotle peppers
1 C. light cream
1 to 4 T. unsalted butter, your choice
S & freshly cracked black pepper to taste
I'm skipping the potato part, believe everyone has sense enough to boil potatoes.
2. Combine the chipotles, cream, and butter in a small saucepan and cook over medium heat for about 5 minutes, stirring, until the butter has melted and the cream has thickened slightly.
3. Drain potatoes, and in medium bowl, combine w/cream mixture. Mash w/fork until cream mixture is mixed in and the potatoes are fairly smooth. S&p to taste. (IMHO, no pepper is necessary as there is plenty of spice from the cream mixture).
