View Full Version : Crock-Pot Cheesy Taco Soup

Thought we would get ready for the Ice\Snow storm! Here is one of my favorite soup recipes.

Ingredients


1 (1 oz) packet taco seasoning
1 (1/2 oz) packet ranch dressing mix
3 cups water
1 lb ground beef
2 (16 oz) cans ranch style beans or chili beans (undrained)
1 medium chopped onion
1 1/2 lbs Velveeta cheese cubed
1 (15 oz) can of diced tomatoes (undrained)
1 (10 0z) can tomatoes & green chilies (Ro-tel your choice of heat undrained)
1 (16 oz) can no bean chili
1 (15 1/2 oz) can corn (drained)


Directions


#1-Brown ground beef & onion in large skillet. (drain)
#2-Combine ground beef/onion mixture & all other ingredients in 5 quart
Crock-Pot.
#3-Cook on low 4-5 hrs. or until heated through & cheese is melted.
#4-Top soup with your favorite Taco condiments: onions, sour cream, sliced
jalapenos, shredded cheddar cheese, tortilla chips, salsa, etc.

When I make this I use the whole block of velveet and use 2 taco seasonings. I also use a bag of frozen corn, just because I like it better.

I've never used the ranch seasoning or velveeta!! I'm adding those next time!!

This recipe was very good. I served with several other soups DS first birthday party and was the first game. My only complaint is that I could not find anything called grated American cheese. Forgot onion, chili beans and bean farm and adds no one can of black beans added a can of Rotel and the chicken broth instead of water.

Haven't been on here in a while, but got on here and copied this recipe for our church's "Soup Bowl" Party for the superbowl and it was awesome. Had so many compliments but gave you credit, and the corn makes it perfect.

We have the same recipe w/o the Velveeta/chili and really like it; fixed your version tonight and it was delicious. Served it w/Jalapeno Focaccia Bread from local Food Pyramid store; great combo!! Thanks for sharing.
