View Full Version : Roasted Red Pepper Parmesan Chicken

OK, here's a new one. I kinda stumbled upon this recipe trying different things with chicken. Due to the cold weather, I've been trying new things inside. Here's one of them that turned out really good.

Chicken breast-I usually get a good rub of spices and let chicken sit and marinate in the rub for at least 30 minutes.

Peppers- I used red and green. Dice them

Whole garlic cloves-4 garlic cloves, sliced, not minced.

Fresh Basil- Fresh is a must! You can find it in your grocery store usually by the bag salads

Onion- Half of a white onion chopped.

Bacon- 3 pieces of bacon cut up into bits. I used raw bacon fresh out of the fridge, makes it easier to cut the colder it is. I try to trim most of the fat, but leave just a bit on.

In large skillet pour in 4 tables spoons of light olive oil or just enough to coat the skillet and begin to heat oil on medium high.

Put all of your bacon and vegetables in(Red, green peppers, garlic cloves, fresh basil, onion) Saute until veggies are softened and have a bit of golden brown on them.

Move veggies to sides of the skillet and put on your chicken breast. Brown on both sides. Once breasts are browned turn your heat down to low or simmer and then move your veggies onto the chicken breast. I use a spoon to get this done. Cover and let simmer for a good 45 minutes.

Take your chicken breast out of the skillet and put onto baking sheet covered with foil. Make sure you keep the veggies on top of the chicken. Pre-heat oven to 400 and top chicekn breast with freshly grated parmesan. Bake in oven for about 10-12 minutes or until cheese is melted.

I also make a gravy out of the left over veggies and grease/fat. Pour off most of the drippings but about 4 tables spoons leave the left over veggies in skillet. Mix up a 1/2 cup of water and 4 tablespoons of flour in seperate bowl. Pour into skillet and stir until it thickens on low to meduim heat.

Makes for a wonderful, kinda healthy meal:music-smiley-005:

Sounds great, and fits my low carb diet to a T (except that gravy, which I will just skip.) I'm going to try this this week.

Yeah, the gravy was just an after thought when I looked at the skillet and saw all the yummy goodness still left:)

Other than that it is a pretty decent meal in terms of being low fat.

If you're low-carbing, you eat plenty of fat. In fact, I lose best at about 65-70% fat. It's just starch and sugar you have to avoid!
