Cucumber recipes - Anything but Pickels!

Anyone got any recipe's for cucumbers other than pickels and relish? Also, any suggestions on how to freeze them? My wife can't seem to grasp the idea that one package of seeds is PLENTY to feed us for the summer.

I like spicy Thai cucumber salad. I'll have to try to locate a recipe for you. It's usually cucumbers, red onion and carrots in a very sweet, hot marinade.

I peel/slice cucumbers/onions, and put 'em in vinegar (white/cut with water to reduce acidity). Goes well with sliced tomatoes and a salt shaker!

Add bell peppers and tomatoes to the cukes and onions. I also use italian dressing to marinade. Yum!
